Deconstructed Tomato, Mozzarella and Basil Salad.

We have a bumped crop of homegrown tomatoes at the moment so I've been coming up with ways of showcasing our beauties.


I made this for a starter for dinner last night.  'Made' is actually a bit grandiose, I in fact just placed the ingredients for a tomato and mozzarella salad on a long plate and then we assembled as we went.  It is a really fun idea for a starter and has the added joy of requiring next to no preparation.

Ingredients

Ripe tomatoes (2-3 per person)
Buffalo mozzarella (1 tbsp per person)
3 parts Olive oil to 1 part balsamic
Salt and black pepper
Purple or Green/Sweet Basil (3-4 leaves per person)

Method

1.  Arrange the ingredients on a plate, leave the tomatoes whole, mix the oil and vinegar in a small bowl, tear the mozzarella but leave the basil leaves in tact.  Scatter over some seasoning.



Amazingly delicious and rather fun.
