Plum Ice Cream. Smooth and Addictive.

This is a delicious ice cream recipe from the BBC Good Food website.


It is slightly more involved than most ice cream recipes but you can tell in the eating as it is unbelieveably delicious and creamy.  A good decadent one for a dinner party methinks.

Ingredients (makes 1 litre)

450 g ripe plums, stoned and quartered
125 g brown sugar, I used a mixture and it worked fine
4 eggs yolks
125 g icing sugar
284 ml pot double cream

Make sure your ice cream maker is ready to go.

Method

1. Quarter the plums and remove the stones.  Place in a deep saucepan with the brown sugar and 300 ml water.  Bring to the boil, cover and simmer for 10 minutes or until the plums are really tender.  Press the stewed fruit through a sieve and pop in the fridge to chill.  


2. Put the egg yolks and icing sugar in a bowl and stand the bowl over a saucepan of gently simmering water.  Whisk with electric beaters until the mixture has just warmed through.  Take the bowl off the heat and continue whisking until the mix has trebled in volume.  Place in the fridge.


3. Whip the cream with 2 tbsp of iced water until it just holds its shape.  Add the plum puree and egg mixture to the cream and whisk lightly together.
4. Pour the mixture into your ice cream maker until almost frozen, then spoon into a freezer-proof serving dish, I think a loaf tin works very well.  Then place in the freezer until you’re ready to serve.

  1. Sounds amazing...I live in Franschhoek the plum capital of the southern hemishere so definately going to try this.....i had a tea room in Cambridge many years ago The Little Tea Room opposite St Johns college but it closed last year.....i love your blog Patricia
