Home Made Tortillas. So Much Better than the Bought Stuff.

Until last week I had always bought tortillas, but never ever again - I can't emphasise enough how easy they are to make.  You need literally 15 minutes to weigh, mix, rest, roll and cook these babies.  And best of all, the results are amazing.


There is no damp cardboard taste that often comes with the microwaveable ones.  They are soft and delicious, perfect to serve with chili http://bizandthebear.blogspot.com/2012/10/the-ultimate-chili-con-carne.html, guacamole http://bizandthebear.blogspot.com/2012/06/chunky-guacamole-essential.html and sour cream, and any leftovers make great wraps for packed lunches.

Ingredients (makes about 10)

2 mugs of flour
1/2 tsp salt
3/4 mug water
4 tbsp olive oil

Method

1. Mix the flour and salt together in a large bowl.
2. Add the water and olive and stir to make a smooth dough.  Knead for a minute or two on a floured work surface.  Allow to rest for 5 minutes.


3. Heat a frying pan until really hot.
4. Divide the dough into 10 pieces and roll out each into a thin circle (there is no need to be a perfectionist).  As you roll one, pop it into the pan and dry fry for about 2 minutes on either side (ie not adding any oil).


Continue until you've rolled, and cooked all the tortillas...


Keep them warm in a low oven if you're eating them immediately.  Now how easy is that?!

  1. Extremely good tortillas! They work so well with chilli con carne and trimmings, rolled into THIN tubes (the diameter of cannelloni), naturally eaten by hand... ¡Olé!
