Stewed Prunes. Hotel Stylee.

Last weekend we flew to Cape Town.  We stayed in a cute B&B in Stellenbosch where crucially they served a seriously exciting buffet breakfast - yoghurts, cereals, fresh fruit salad, stewed fruit, homemade muffins, toast and a fry-up for those who love a bit of protein in the morning (the idea has always made me feel rather queezy).  There was no UHT milk or processed bread - hurrah!


So I gorged on stewed fruit, yoghurts and granola and as a result was inspired to stew some prunes on my return home.  So here is the most simple recipe for hotel style prunes - you can make them in so many different ways and store in the fridge for days.  Not only will a few of these every morning keep you, ahem, 'regular' but they will also start your day in a seriously yummy and healthy way.

Ingredients

Dried pitted prunes (or other dried fruit)
Liquid - apple juice/orange juice/strong tea/water with honey
Spices - cinnamon/star anise/cloves (optional)

Method

1. Place some prunes in a bowl and cover with your liquid of choice and spices of choice (if using).
2. Pop in the fridge overnight.

Serve dolloped on top of thick greek yoghurt, porridge, cereal or on their own
