Marmite and Cheese Masterpiece.

Marmite and cheese.  What a combination.  If you are, like me, a Marmite lover then you know what I'm talking about.  It’s something about the combination of salty creaminess.  Even Starbucks offers a Marmite and cheese toastie and they must’ve done their research.  So the cogs started whirring this week when we had some leftover white bread…a kindof Marmite and Cheese bread and butter pudding.  Genius.   If I do say so myself.


It is so easy, tastes delicious (all fluffy like a souffle), is great at any time of the day and all the ingredients will be sitting in a Marmite lover’s kitchen.  Oh and leftovers are pretty good blitzed in the microwave.  Kid, student and adult Marmite lovers, rejoice!

Ingredients - serves 2

White bread, fresh baguette is best but a stale loaf would be fine
Butter
Marmite
Mature cheddar cheese, a couple of large handfuls when grated
150 ml milk
125 ml cream
1 egg, beaten

Method

1. Heat the oven to 190C and butter an ovenproof dish big enough for 2.
2. Cut the bread into thick slices.  Butter one side and spread with Marmite.



3. Put a layer of the bread in the dish, top with a handful of grated cheese, place another layer of the bread over the top and finish with the second handful of cheese.
4. Mix together the egg, milk and cream and pour over.  Allow to soak in for 10 minutes.



5. Bake in the oven for 35 minutes or until puffed up and golden brown.  Serve immediately with a green salad.
