We had ostrich steak burgers on Saturday night. They were completely divine - ostrich is such a fab meat, sweet like venison and equally lean. The hubbie wanted a 'tomato relish' for his burger so I came up with this simple and very easy recipe.
It was seriously yummy and received two big thumbs up through a mouthful of steak. A fab way to use up excess tomatoes.
Ingredients (serves 4)
3 ripe medium tomatoes, finely chopped
1 red onion, finely chopped
4 cornichons, finely chopped
1 handful parsley, (you guessed it) finely chopped
3 tbsp olive oil
2 tsp red wine vinegar
3 dashes of Tabasco sauce
Salt and black pepper
Method
1. Mix all the ingredients together and serve with a burger.
