Tomato Chutney for Curries. So Easy.

I've called this a chutney as it combines veggies with vinegar and sugar but really I think chutney is too grand a name, it takes second to make and requires zero cooking.


Anyway,  I came up with this recipe as a means of dealing with our endless supply of tomatoes, but it was so delicious that its fast becoming a must addition to curry night.

Ingredients (enough for 4)

1 large shallot, finely chopped
1 handful fresh mint leaves, torn
1 tsp caster sugar
3 tbsp white wine vinegar
3 medium ripe tomatoes, finely chopped

Method

1. Mix all the ingredients together and allow to stand for 20 minutes.

Delicious with any curry.
